Sala'o combines its Cuban roots & seafood with an homage to the honorary Cuban himself, Ernest Hemingway and his book "The Old Man and the Sea". Right here, in a little corner of Miami's popular Calle Ocho, you are transporting yourself to a dimly lit ambiance reminiscent of the early 1950's. Enjoy bold dishes created by Chef Alejandro Porben, which burst with flavor as you sip on a selection of handcrafted, tableside gin & tonics specially created to invoke adventure in our guests. From seafood to quality meats, the chef has curated a menu that ties his signature twist with traditional Cuban seafood dishes. The Cuban vibe, also know as "son", of our live entertainment accompanies the feeling of a nostalgic Cuba, what we know as a "Cuba Libre", that can only be complimented by an authentic daiquiri in true Hemmingway fashion.

Chef Alejandro Porben joins Sala’o Cuban Restaurant & Bar as Executive Chef. Born and raised on the island of Cuba and boasting an impressive culinary background, Porben grew up with the flavors and beauty of the Caribbean. To Porben, cooking was always a family affair. Surrounded by a family that loved to cook and eat, every meal was a celebration with joy at is center. Naturally, Porben developed a passion for the craft, and decided to pursue a career in the culinary industry.

During his time in Cuba Porben attended the Culinary Association of the Republic of Cuba and worked at some of the island’s notable eateries. He then took his talents to Miami and enrolled in Le Cordon Bleu College, where he obtained a degree in the Culinary Arts.

Prior to his current role as Executive Chef at the beloved Calle Ocho eatery, the talented toque worked at some of Miami’s highly acclaimed restaurants including Scarpetta at Fontainebleau Miami Beach, Zuma in downtown Miami and Tamarina Restaurant & Bar in Brickell.

At Sala’o, Chef Porben has created inventive new menus that merge the flavors of his island roots, his classic culinary training and deep experience with global cuisine.
